Thai Bowl

I love, love, love bowls with delicious ingredients that add variety to every fork. And this one is inspired by one of our favourite cafés "Apfelkern & Kolibri" and is a must-have on my blog.

Wow! every bite is a new flavour experience!

Typically, bowls are relatively time-consuming, as all the individual components have to be prepared. Here it is actually relatively quick, as the various components are relatively simple and yet very tasty overall.

Preparation time: approx. 45 min

Ingredients for 4 portions

For the curry:

  • 2 courgettes
  • 1 aubergine
  • 1 red pepper
  • Coconut oil
  • 3 tbsp yellow curry powder
  • 1 jar of chickpeas
  • 1 tin of coconut milk

For the peanut sauce:

  • 65g peanut butter
  • 2 tbsp soy sauce
  • 2 tbsp maple syrup
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • some water

 

For the other bowl components:

  • ½ cup Basmati rice
  • Glass noodles
  • Smoked tofu
  • Sesame

Preparation 

For the Curry Wash the courgette, aubergine and pepper and cut into bite-sized pieces.

Heat a pan, add a little coconut oil and fry the curry powder briefly until it is wonderfully fragrant. Deglaze with a little water and fry again.

Push the fragrant paste to the edge of the pan and fry the vegetables in the centre. Then add the chickpeas and deglaze with coconut milk.

Simmer a little until the sauce has a creamy consistency.

 

For the Peanut sauce Mix all the ingredients in a bowl and blend to a smooth sauce. If the consistency is too thick, slowly stir in a little water until the consistency is right.

 

The Rice and also the Glass noodles Cook according to pack instructions.

The Smoked tofu cut into cubes and roast in a pan in a little coconut oil until crispy.

 

Serve everything in a nice bowl and enjoy.
