Apple and rose cakes

I love simple desserts and these cakes are definitely one of them!

Ohhhhh...! What a rose dream!!!

Puff pastry

Of course, you can also make your own puff pastry, but it's even easier with the ready-made version. And yes, you can now also buy ready-made vegan puff pastry, which is why we're using this great option here and making it really easy 🙂
Preparation time: approx. 30 min

Baking time: approx. 25 min

Ingredients for 6 cakes

  • 1 roll of vegan puff pastry
  • 2 small red apples
  • 1 lemon
  • 250 ml water
  • approx. 30 g apricot jam
  • some icing sugar

Preparation 

Wash, halve and core the apples. Then cut into thin slices.

Squeeze the lemon and pour the juice into a pan with the water. Add the apple slices and cook for about 5 minutes on a medium heat so that the apple slices soften a little. Then drain the apple slices well on kitchen paper.

Lay out the puff pastry crosswise. Cut in half horizontally and then cut on edge into three equally wide strips. This creates 6 pieces.

Spread the jam on each strip and place the apple slices on the top edge of the pastry strip with the red bow next to each other. Now fold the pastry up in the centre so that only the upper red bows of the apples are still visible. Roll up the pastry from one side to form roses.

Place the roses in a silicone muffin tin and bake at 180 degrees (top and bottom heat) for about 25 minutes until the roses are lightly golden brown.

Leave the rose tartlets to cool and dust with icing sugar.

Tip: the cakes also taste really good lukewarm with a scoop of vanilla ice cream.
