Fantastically savoury potato salad

Let's be honest: a really good potato salad is something special and even as a vegan, you don't want to miss out on it just because it doesn't taste as good without animal products.

This potato salad is simple and can be conjured up in no time at all and will win the hearts of all gourmets!

So here comes the rescue! It works - and with flying colours! And it's not even complicated.

The secret ingredient Kala Namak

Do you know the sulphur salt Kala Namak? It is often used in plant-based cooking to add a certain flavour to dishes that "live" from it. But be careful - the salt has a very intense flavour, so be careful with the dosage. It's better to use a little less at first and then season a little more if necessary. Don't let the salt and sulphurous flavour take the shine off the dish.

Ingredients for 6 people

  • 1.5 kg potatoes, waxy (important!)
  • 400 g smoked tofu, cut into small cubes
  • 2 onions, cut into rings
  • Frying oil
  • 1 cucumber, washed, quartered slices
  • 250g cocktail tomatoes, washed and halved
  • 1 bunch rocket, washed

For the dressing

  • 2 tbsp white wine vinegar
  • 6 tbsp rapeseed oil
  • 3 tbsp mustard
  • 2 tbsp agave syrup
  • 1 teaspoon kala namak
  • Pepper

Preparation 

Cook the potatoes in their skins for about 20 minutes until soft, drain and leave to cool slightly.

Fry the smoked tofu cubes well in the pan with a little frying oil until the sides are crispy brown. Add the onions and sauté briefly. Put both to one side.

For the dressing, mix all the ingredients well.

Peel the lukewarm potatoes, cut into slices and place in a bowl with the cucumber, tomatoes, rocket and tofu and onion mixture. Add the dressing and mix everything together carefully.

Leave to chill in the fridge for approx. 2 hours and flavour again before eating. If the mixture has now soaked up the dressing well and lacks a little flavour, simply stir in some more dressing mixture and pour over the top.
