I like it when cakes are easy to make and have a great flavour at the same time. This creation is just such a cake. It can be stirred together in no time at all and is virtually guaranteed to succeed and taste great

Variations

Of course, you can also use other fruits of your choice. E.g. cherries, peaches, berries... And you can also be creative and choose your favourite nuts. E.g. (slivered / sliced) almonds, hazelnut pieces...

Preparation time: approx. 20 min

Baking time: approx. 40 - 45 min

Ingredients for a 22cm springform tin

  • 160 g margarine
  • 140 g cane sugar
  • 1.5 sachet vanilla sugar
  • 1 pinch of salt
  • 200 g spelt flour
  • 60 g wholemeal spelt flour
  • 2 tsp baking powder
  • 200 ml oat milk
  • 1 tsp lemon zest
  • 2 apples
  • 2 pears
  • 1 handful of walnuts

Preparation 

Preheat the oven to 160 °C fan oven and grease a 22 cm round springform tin.

Beat the margarine, sugar, vanilla sugar and salt in a food processor until frothy. Mix the flour and baking powder together and mix in alternately with the oat milk. Add the lemon zest and stir in.

Pour the batter into the tin. Peel and core the apples and pears and cut into eighths. Insert the fruit wedges lengthways into the pastry in a decorative fashion and press them into the pastry. Scatter the walnuts over the cake.

Bake the cake for approx. 40-45 minutes, remove from the oven and leave to cool

Enjoy either as is or decorated with icing sugar.
